Think about the logic for a second: If you eat green vegetables, does your skin turn green? Obviously not. Your body breaks the food down and uses the vitamins.

So why did we believe that eating dietary fat somehow magically bypassed digestion and went straight to our bellies? In the 1980s, the “Low-Fat” craze took over the world. We ripped the fat out of yogurt, milk, and snacks.

But when you remove fat, food tastes like cardboard. So food companies replaced the fat with massive amounts of sugar. The result? The greatest rise in obesity and diabetes in human history. To fix our diets, we have to start by completely resetting how we view fat and cholesterol.

The 1980s Diet Myth vs Biological Reality

How we thought fat worked vs. how it actually works

❌ THE MYTH Eat Fat

Clogged Arteries & Body Fat

✅ THE REALITY Eat Fat

Brain Health (60% of brain is fat) Hormone Factory (Builds Testosterone)

Let’s talk about Cholesterol

Think of your body like a house being built. Cholesterol is the literal bricks and mortar.

It isn’t a poison; it’s a vital structural component. Every single cell in your body needs cholesterol to build its outer wall. What’s more important: your sex hormones (like testosterone and estrogen) are literally manufactured out of cholesterol. Without fat, your hormones crash. Your brain, by the way, is made up of about 60% fat.

"When you eat a low-fat diet, you essentially tell your brain and your hormones to stop paying their biological bills because there's no money in the bank."

The Delivery Truck Analogy (HDL vs LDL)

But wait—if cholesterol is so good, why does my doctor test my LDL and HDL?

Cholesterol is like oil, and your blood is like water. Oil and water don’t mix. If you drop cholesterol directly into the blood, it clumps up. To solve this, your liver packages the cholesterol into little “submarines” or “trucks” called lipoproteins so they can float through the bloodstream.

The "Good" vs "Bad" Cholesterol Explained simply

They aren't actually cholesterol—they are just the delivery vehicles.

The Liver (Warehouse) The Body (Cells & Brain) LDL Truck 📦→ Delivers fresh materials to build hormones ←♻️ HDL Truck Recycles old/excess materials back to liver

So when is LDL actually “bad”?

LDL is just a delivery truck doing its job. It only becomes dangerous when the truck gets “damaged.” What damages the truck?

Sugar and Industrial Seed Oils.

When you consume massive amounts of sugar and highly processed seed oils, it creates inflammation in the bloodstream. This inflammation oxidizes (damages) the LDL trucks. Imagine a damaged delivery truck crashing on the side of the highway. When enough damaged trucks crash against the walls of your blood vessels, it creates a traffic jam. That is plaque buildup. That is a heart attack.

The fat didn’t cause the heart attack. The sugar and the inflammation wrecked the truck.

The Bottom Line Strategy

Do not be afraid of fat. Saturated fats (eggs, grass-fed butter, quality meat) build your cellular structure. Monounsaturated fats (olive oil, avocados, almonds) are brain fuel. The only fats you must absolutely avoid are highly processed Seed Oils (Canola oil, vegetable oil, margarine) because they cause the inflammation that breaks the system.
